Thank Your Mother

Remember when you were little, and food just magically appeared on the table every night? You may not have liked all of it, but it was there (for most of us at least). I have a new found appreciation for this as a mother now myself. I think one of the most difficult and time consuming duties I have is providing meals for my family. It can sometimes even take an emotional toll.

This weekend, I spent a lot of time looking through my cookbooks, and taking mental stock of what is in our fridge and pantry. With our 2009 family resolutions, we are now also trying to stick with a strict budget. We spend SO much on food! Add my own personal goals to FINALLY lose weight and it is quite a challenge. So... how possible is it to do all of the following:
1) Eat HEALTHY and low cal (and track it all on WW website!)
2) Save money... stick to the budget!
3) Eat "Green" and "Organic" as much as possible
4) Please all members of the family with meal choices (the hardest of all, and not because of a picky toddler)

And then... find the motivation to cook determined meals every night after working all day long.

sigh. I would eat whatever my mother put in front of me with gratitude and appreciation if I could do it all over again.
